California Food and Agricultural Code Section 34061

CA Food & Agri Code § 34061 (2017)  

Each vat, tank, or other receptacle in which milk or any milk product is pasteurized shall be equipped with a recording thermometer device to accurately record the temperature to which, and the length of time for which, the pasteurized product has been heated.
